This is a nice salad which is very easy to prepare and perfect for these summer months.

What you need?

Source some lovely green leaves – I particularly like kale and spinach, but it works with lettuce or any other green leaves that are in season.

Next take 4 carrots and grate them up and add to the leaves

Finally, take three handfuls of seeds – sesame pumpkin, sesame, pumpkin, sunflower. I prefer raw, organic seeds for maximum nutrition, but the recipe works with roasted seeds too.

Dressing

Now for the magic – the dressing. For this, you’ll need:

2 ripe avocados

4 large sun-dried tomatoes

A teaspoon of chia seeds (great for energy and as an aid to digestion)

A pinch of sea salt (again, sea salt has more minerals than table salt, but the recipe works with table salt if you can’t get your hands on sea salt)

A pinch of raw garlic granules

Directions

Step 1: Chop the leaves, grate the carrots and mix together with the seeds

Step 2. Pull all of the dressing ingredients together into a blender, push down and then blend on high speed until smooth (about 1 minute in my vitamin blender)

Step 3: Take the mixture and gradually stir into the salad and fold in until all of the leaves are covered with the delicious dressing.

Step 4: Enjoy on it’s own or with flax crackers or quality protein.
