We’re experiencing a heat wave in the UK and with hot weather comes a desire for Icecream. My 6 year-old son, Samson, loves ice-cream and so my challenge was to source a recipe that passed the ‘Samson’ test and thanks to Karen Knowler, this one hit the mark:
‘What you’ll need:
- 1 cup of water (good quality water)

2 frozen bananas (peel before freezing and then freeze until hard)

a small handful of fresh strawberries (preferably organic for maximum nutrition)
OPTIONAL: small piece of vanilla pod OR a few drops of vanilla essence
Directions
1) Put all ingredients into a Vita-Mix or blender (NB: If not using a Vita-Mix, allow the frozen bananas to thaw for a while first, otherwise your blender may find it too tough to handle).
2) Blend all ingredients thoroughly until thick whipped ice-cream like consistency is achieved.
3) Pour into a tall glass, serve with a strawberry on top and enjoy!’
